Ingredients (9)
- 1/2 cup (125ml) guava juice
- 1/2 cup (125ml) water
- 1/4 cup (45g) palm sugar
- 2 whole star anise
- 1 vanilla bean, split
- 1/4 papaya, seeded, peeled, cut into 3cm pieces
- 1/4 pineapple, peeled, cored, thinly sliced
- 12 fresh lychees, peeled
- 1 carambola (star fruit), thinly sliced
Method
- Step 1 Combine the guava juice, water, palm sugar, star anise and vanilla in a small saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves and syrup thickens slightly. Remove from heat. Set aside to cool completely.
- Step 2 Place the papaya, pineapple, lychees and carambola in a large bowl. Pour over the syrup and cover with plastic wrap. Place in the fridge for 1 hour to chill.
- Step 3 Spoon evenly among serving bowls and serve immediately.
