Ingredients (9)

  • 1/2 cup (125ml) guava juice
  • 1/2 cup (125ml) water
  • 1/4 cup (45g) palm sugar
  • 2 whole star anise
  • 1 vanilla bean, split
  • 1/4 papaya, seeded, peeled, cut into 3cm pieces
  • 1/4 pineapple, peeled, cored, thinly sliced
  • 12 fresh lychees, peeled
  • 1 carambola (star fruit), thinly sliced

Method

  • Step 1 Combine the guava juice, water, palm sugar, star anise and vanilla in a small saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves and syrup thickens slightly. Remove from heat. Set aside to cool completely.
  • Step 2 Place the papaya, pineapple, lychees and carambola in a large bowl. Pour over the syrup and cover with plastic wrap. Place in the fridge for 1 hour to chill.
  • Step 3 Spoon evenly among serving bowls and serve immediately.
