Gingerbread bliss balls

Ingredients (13)

  • 200g gingerbread men cookies
  • 1 cup soft and juicy dried figs
  • 1/4 cup dutch-processed cocoa powder
  • 1 cup smooth peanut butter
  • 3 tsp ground ginger
  • 1 tsp mixed spice
  • 1/3 cup golden syrup
  • Chopped dried apricots, to coat
  • Chopped goji berries, to coat
  • Sesame seeds, to coat
  • Black chia seeds,to coat
  • Chopped pepitas, to coat
  • Chopped sliced natural almonds, to coat

Method

  • Step 1 Place gingerbread in a food processor. Process to coarse crumbs. Add figs, cocoa, peanut butter, spices and golden syrup. Process until mixture is smooth and well combined.
  • Step 2 Roll tablespoons of mixture into balls. Top 5 balls with dried apricot. Roll remaining balls in different coatings. Refrigerate 1 hour or until firm. Serve.
