- 1/2 cup chipotle salsa
- 1/2 cup brown sugar
- 1 tbsp olive oil
- 3 garlic cloves, crushed
- 1.3kg American style pork ribs
Method
- Step 1 Combine salsa, sugar, oil and garlic in a large baking dish. Add ribs and turn to coat. Marinate, covered, in fridge for 4 hours or overnight if you have time. Bring to room temperature.
- Step 2 Preheat oven to 200C or 180C fan-force. Set aside half the marinade. Cover dish with foil and bake for 1 1/2 hours or until very tender. Remove foil and brush with reserved marinade. Roast for 15 minutes, brushing ribs with sauce every 5 minutes or until sauce has caramelised.
