Ingredients (2)
- 1/2 butternut pumpkin (about 700g), peeled, seeded, cut into 4cm pieces
- 2 tbsp honey
Method
- Step 1 Place the pumpkin in a large saucepan and fill with enough water to cover by 2.5cm. Bring to a simmer over high heat, then reduce heat to medium and simmer for 20-25 mins or until the pumpkin is very tender.
- Step 2 Strain in a colander and set colander over the hot saucepan to allow pumpkin to steam dry.
- Step 3 Transfer the drained pumpkin and honey to a blender or food processor and blend until smooth.
