6 carrots, peeled, halved crossways, then halved lengthways
1 bunch rocket, trimmed, washed, dried
1/2 cup fresh continental parsley leaves
4 radishes, thinly sliced
2 tbsp fresh orange juice
2 tbsp extra virgin olive oil
salt and pepper

Method
Step 1 Preheat oven to 200°C. Place carrots on a baking tray. Spray with olive oil spray. Season with salt and pepper. Roast for 35-40 minutes. Set aside for 10 minutes to cool. Add rocket, parsley and radishes. Toss to combine. Whisk together orange juice and olive oil. Season with salt and pepper. Drizzle the dressing over the salad to serve.
