Lemon grass, mint & apple iced tea

Ingredients (7)

  • 1 lemon grass stalk, finely chopped
  • 5 fresh mint leaves
  • 300mls boiling water
  • 500mls (2 cups) unsweetened apple juice
  • 1/2 lemon, quartered, finely sliced, to serve
  • Ice to serve
  • 4 sprigs fresh mint, to decorate

Method

  • Step 1 Combine the lemon grass and mint leaves in a small jug and pour the boiling water over. Stand for 15 minutes to infuse and cool. Strain liquid into a large jug and add the apple juice. Stir to combine. Place a lemon slice in each glass, top with ice and then pour the tea over. Serve immediately decorated with the mint sprigs.
