Chicken schnitzel with apple salad

  • 4 Coles RSPCA Approved Chicken Breast Schnitzels
  • 1 Granny Smith apple, thinly sliced crossways
  • 2 spring onions, thinly sliced
  • 1 bunch radishes, trimmed, thinly sliced
  • 120g pkt Coles Australian Baby Rocket
  • 1 tbsp basil, chopped
  • 2 tbsp red wine vinegar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • Lemon wedges, to serve

Method

  • Step 1 Preheat oven to 200C. Line a large baking tray with baking paper. Cook the chicken schnitzels following packet directions.
  • Step 2 Meanwhile, combine the apple, spring onion, radish and rocket in a large bowl. Combine the basil, vinegar, honey and olive oil in a small bowl. Drizzle over the apple mixture. Season.
  • Step 3 Serve the chicken schnitzels with the apple salad and lemon wedges.
