Wash the white radish. -

Add salt to remove excess water. -

After letting it sit for two hours, a lot of water was released (I used about 150 grams of salt for 10 pounds of radish). -

Squeeze the water out of the radish with your hands. If possible, you can also use a bag to turn it around and use a stone to press out the excess water. -

It is basically OK to dry it for two days. If you want it to be crispy, you don’t need to dry it too much. -

Wash the dried radish in the sun for two days with boiling water and drain it. -

Add an appropriate amount of salt (according to personal taste), knead evenly, and then dry it for about two hours, sprinkle with chili powder, mix well, and then it is ready to be installed in the jar. -

Finished product (it is best to store it in a small jar in the refrigerator, it will last for a year).
Tips
1. Wash and dry-clean the radish for two to three minutes.
2. You can add less salt to the washed dried radishes, because the salt will also seep into the radishes when the water is removed.
